Bye bye January

Hard to believe we are already finished the first month of 2012. It's come and gone so fast, that I'm sure the rest of the year isn't too far behind it. I'm also hoping as the year progresses, things on the family front will get better. We have had quick a few illnesses to deal with in the family, and a few new ones popped up already this year (Hubs and I are healthy and ok). I'm hoping everyone gets better and healthy.

Homemade Alfredo Sauce

I came across this recipe on a fellow bloggers site and thought I'd add it to my recipe collection to try.

Alfredo Sauce


Ingredients:

5 tablespoons sweet butter {I just used regular salted butter...not sure if it's any different}

2 garlic cloves, minced

2 cups heavy cream

1/4 teaspoon white pepper {never heard of white pepper, so I just used black. Not sure how much I threw in but waaay more than 1/4 teaspoon...I really like black pepper}

1/2 cup grated parmesan cheese

3/4 cup mozzarella cheese

1 (12 ounce) box angel hair pasta


Directions:

Prep Time: 5 mins
Total Time: 25 mins

1 Melt butter in medium saucepan over medium/low heat.

2 Add the garlic, cream, white pepper and bring mixture to a simmer.

3 Stir often.

4 Add the Parmesan cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.

5 When sauce has thickened add the Mozzarella cheese and stir until smooth. STIR FREQUENTLY. {After this step the sauce was a little glue-y for my taste, so I just added some more cream and it was perfect}

6 While the sauce cooks, boil noodles for 3-5 minutes.

7 Place pasta on serving plates and spoon sauce over pasta.

Random Updates

I felt like blogging today, however I don't seem to have a specific topic to talk about so I decided to just have a random post day today. This means there will be short, random snip-its of things going on in life right now.
*The gym is going good so far, I didn't go yesterday, but I've gone 2/3 days so far, so thats not too bad.

*Hubs and I are once again contemplating buying a second home. We have flipflopped on selling and buying a new home, renting our current home and buying a new one, renovating our current home and adding a floor, and just waiting. We are back to wanting a second home and renting this one. We are going to keep an eye on the market and what comes up and see what happens

*I made a wildberry pie the other night (I know, horrible way to start off going to the gym). I figured if I make it and it gets eaten now, then I wont rebuy it. A while ago E.D Smith pie fillings were on sale, so I bought a wildberry filling to try it out. I make my crust homemade using my grandmothers recipe, so it was easy just to fill it with the premade filling. It was quick, simple and tasted delicious. I'd definitly buy the filling again if I wanted to make a berry pie.

*I tried out the OPI shatter polish and the other one I bought with it. I loved them both, however they werent my favorite when used together. I also found the brushes weren't the best when applying the polish. For $10 a bottle, I would expect a better application brush, considering I've had better results with much cheaper polish. Guess its true, more expensive doesnt mean better.

*I'm completely loving the Essie "Little brown dress" polish. Its currently on my toes and is lasting great. It applies nicely too. I think Essie might be my go to brand for the classic shades of polish and some of their more interesting limited ones as well.

*I'm still loving my new winter boots, I've worn them a few times (which is a good sign because sometimes I buy new shoes and don't end up wearing them). They are so warm and give me some added height.

*Work is frustrating me again. We are short staffed and getting busier and we are expected to make things work. Its been an ongoing issue since before I even started working there. They hired to fix the problem (this is where I came in) then turned around and laid off a bunch of people. Grrrr, thank god for pension and decent pay and benefits.

*I'm keeping my eye on flight prices to book my trip home for the summer. Can't believe my baby brother will be graduating in 4 short months.

*My mom is doing good, she starts her treatments on monday, so here's hoping they go smoothly and beat the cancer. I'll be sure to keep you updated on her progress.

Gym Day #1

Hubs and I bought a 1 month gym membership yesterday to test out the gym in our community. Today is our 1st time going and we are starting our commitment right. We got up and were at the gym for 6am. Let the weight loss begin

House Organization

Yesterday, Hubs and I finally got around to getting the house more organized. Hubs younger brother came to stay with us 1.5 weeks ago, so we ended up switching 2 of the bedrooms around. The "now spare bedroom" still needs organization, as we have misc stuff piled in the room.  We ended up cleaning out our coat closet. It needed it sooo badly, it kind of became a catch all for coats, shoes, reno stuff and things that needed to go to manland. We gutted it out, cleaned it and then, only put back what needed to go back in the closet. Now we have so much room and can actually see the floor. We also cleaned out the hall closet and now have a completely empty shelf (just shows how much clutter we had).

I also found the time to put the under the sink organizers in each of the bathrooms. I came across them at Canadian Tire, and they are such a space saver.


  They retail for around $22, but you can buy them for $5-$8 when they go on sale. They are easy to put together, fit around pipes, and the shelves are adjustable. I love the fact that it provides more useable space in the upper part of the cupboard.

After supper last night, Hubs and I ended up cleaning out our fridge freezer. It was so full and disorganized. We pulled everything out, and organized things better, so things were easier to find. It was amazing how much space we have in the freezer and we only threw out an ice cream container, and a ziplock of a mystery food.

Hubs and his brother were also busy friday while I was at work. They moved our master bedroom around so our bed is backing the window and looking at the tv they just hung off the wall.  It feels so good to be making progress in our home towards better organization.

New purchases!!

I had a girls day out shopping with my mother in law last week. It was nice to get out, catch up and do a little shopping. While at the mall, my mother in law wanted to stop in to Payless Shoes. Generally I don't shop there too often because I never seem to find what I'm looking for. This time was a different story. I've been looking for a nice pair of winter boots for a long time. I wanted something that preferably didn't have a heel, was black in color and wasn't too expensive. While in Payless, I came across these:



I instantly fell in love with them. They are so comfortable and warm, and even though they have a wedge heel, they dont feel unstable. I also couldnt resist the fact that they were on sale from $69.99 for $27!!

My other splurges for the day included 3 new bottles of nail polish. The first is "Little Brown Dress" by Essie. I've never purchased nail polish from Essie before but I've been on the search for a brown nail polish for a while and Essie was the first brown polish I've come across. I applied it to my toes the other night, and absolutely love it. Its quite dark when it goes on but doesn't have the harshness of black polish. My only complaint was the brush was a little weird in the application of the polish.

My next purchase was the OPI, Turquoise Shattered Polish. Again, I have never bought OPI polish so this was another first for me. A nail salon was having a buy 1 get 1 half off sale so I figured why not. I haven't tried it yet, but I love the color in the bottle and I'm really excited to try it. I know the crackle polish fad is most likely over, but its still fun for the toes in the summer.

My last purchase was OPI's Overexposed in south Beach. I loved the berry look of this color and it was different then colors I already own. I have yet to try it, but I think it will become a summer favorite.

1. What did you do in 2011 that you’d never done before?
Celebrated my 1st Anniversary and bought a house.

I didn't make any new year's resolutions last year and here are my resolutions for this year:

A couple of my coworkers had babies.

No.

I went to Halifax and Mayan Riviera Mexico

A little more savings, a better job, more fun.

March 13, 2011- Bought our 1st home
July 1, 2011 -1st Wedding Anniversary
June 2011- My sister graduated high school

Buying a home and doing some major renovations

Staying in the job I'm in now.

Nothing other then a cold here and there.

Langos

Every year, our local fall fair has this amazing little Hungarian stand that sells Langos. We tried it the first time we were there and fell in love. Hubs decided he would try to make it himself and after a little google searching he came across this recipe. It's so delicious and not to hard to make, and a great fall/winter treat.
  • 3 or 4 med. potatoes

  • 1/2 envelope of dry yeast

  • 1/2 cup of warm milk for yeast

  • 1/2 tsp. sugar

  • 1 1/2 cups to 1 2/3 cups of flour

  • 1/2 tsp. salt

  • Lard for frying


  • - Cook potatoes in boiling salted water
    - Peel them and immediately mash them, let cool
    - Mix the warm milk with the yeast and sugar (Let the starter sit for 5 or 10 minutes)
    - Mix mashed potatoes with flour and the salt. Start with 1 1/2 cups and add more flour to 

      make a kneadable dough. Knead dough well.
    - Put dough in a bowl and cover.
    - Let dough rise in a warm place until double in bulk. About 1 hour.
    - Roll out the dough with a floured rolling pin on a floured board to 1/2 inch thick.
    - Cut into rectangles, squares or circles. Prick with a knife to keep big bubbles from

      forming.
    - Melt Lard in a frying pan so it is at least 1/2 deep.
    - Fry Langos over medium heat. (If lard is too hot they will burn, if lard is to cool
    the
      Langos will absorb too much lard)
    - When they are done, rub each Langos with a cut clove of garlic and sprinkle with salt

      and Paprika or as a treat sprinkle them with sugar and cinnamon.

    Serve warm. (Good to accompany Bean or Lentil Soups, or a snack with beer or wine.)

    Recap of early days of 2012

    I noticed I hadn't blogged since Jan 3rd so I figured I was about due for a new post. Been busy working and keeping house the last 2 weeks. Sounds like nothing really exciting ever goes on around here but I promise it does. Hubs and I have been married 1.5 years as of Jan 10th. Hard to believe we are coming up on 2 years already.
    Hubs step-brother also came to stay with us yesterday for an indefinite amount of time while he looks for work. It wont be too hard for him to find something, it will definitly be a lot easier then him looking for work in his small hometown.

    I've also been starting to help my best friend plan her wedding. I've given her lots of website info and tips I've learned over the course of planning my own wedding. I've even helped her look for photographers and offer my advice on which one I'd recommend to her (she is getting married in a totally different province so she can't use all my wedding vendors). It's so exciting to be back into wedding planning without the stress of it being my wedding or money.

    I've also been dealing since Christmas, with the fact that my mom's quite sick. I know I've mentioned it on here briefly in a post and I promise I'll post more but frankly right now, I just don't feel like talking about it. I hate the fact that I even have to think about it, the fact that its even an issue, and that of all things its happening to my mom. And of course it couldn't be some easy thing to solve, heck it couldn't even be something common and above all it had to be something advanced and aggressively malignant. At this point in time I often go through the days feeling numb at points, feeling frustrated she has to go through and deal with all this and that we as a family have to even use the word Cancer in our family. I hate saying the name, I'm trained to diagnose cancer, but the word is so evil and hated and at times I wish I could just erase it but I can't and so we are going to have to learn to deal with it, deal with Miss Mable (as we call the tumor) and hope as hard as hell that she can get through this. We all remain positive and will continue to remain positive through this difficult journey.

    Bar Service for Our Wedding

    I came across E & S Events through a local community site while planning my wedding and searching for a bartender. A bridesmaid however told us she would look after the bartending as her wedding gift to us so we didn't pursue them any further. A couple days before the wedding, the bridesmaid cancelled on finding us a bartender and we were stuck. Where can you find a bartender to work your Sat night wedding just days before the event (I was not a happy bride at this point). I remembered seeing their ad and contacted them in hopes they were available. To my saving grace they were able to bartend our wedding and had a personal meeting with us to get all the details even though it was such short notice. I can't give enough praise to these 2 girls. Their services are extremely affordable (even on such short notice), they are professional and pleasant to work with and I would recommend them to work for any event or function. I keep their contact info handy for friends and for future purposes. Thanks again for saving our special day.

    Happy 2012!!

    Its officially 2012!
    Gone are the memories and days of 2011 and the fresh beginning of 2012 is upon us. 2011 was a good year to Hubs and I. We celebrated our 1st wedding anniversary, bought a house, got a new car, went to Mexico again, and did some major renovations to our home. 2011 also brought many sad times for our families with many family members having had stays in the hospital. Looking ahead, I hope 2012 will be a prosperous year for Hubs and I. We have a few more reno's we would like to do, we both hope to go back to school and I want to get our home a bit more organized. Guess we will find out what the year ahead has in store for us....
